Well, 2016 is going out swiftly. I suspect that as we get older, time has a way time has a way of moving quickly. Now it seems the week just starts and it is another week. Last Christmas seems only a short time ago and yet here we are in the middle of the holiday season once again.
I will have to say this past year was full of surprises. Probably the very most unexpected event was that our 45th president will be a reality star.
This year was a leap year which only comes around every four years. Homes were burned and destroyed by a child’s riding toy, Pokemon Go caused an insane amount of followers to walk all over the streets in many cities looking for Vensisaur and Charizard. Kentucky Fried Chicken even developed a candle that smells like fried chicken. We lost some loved icons, such as John Glen, Arnold Palmer, David Bowie, just to name a few.
We had some surprising happenings to happen right here at home. We legalized liquor here in the city after several times of voting it down. Nuns were brutally killed in a senseless robbery. Home fires tragically took the lives of several residents.
Really good things have happened also. Now our city streets are strategically marked as to which way we can travel hoping to help congested areas. Bikers now have their own lanes and hopefully less accidents. We have had several new businesses to open and prosper. We seem to all be pulling together for the good of everyone.
How about New Year’s Resolutions? Well, I for one never promise to do anything in which I know I will renege. I will say I will probably eat more than I should and things that I should not eat.
I will not exercise; I will more than likely be lazier than I should be. There are several other things I will not mention. I will do my best to be nicer to people, more compassionate, and more giving. These seem to be my resolutions each year. What are your declarations for the coming year?
Weekly Recipe
New Year’s Black Eyed Peas and Cabbage
4 cups dried black eyed peas soaked overnight. 4 – 5 slices of bacon, 1 chopped onion, 1 stalk diced celery, 6 cups chicken broth (bought or homemade), salt and pepper. Cook bacon until crisp and set aside drippings. Cook onions and celery in bacon fat until tender then add broth salt pepper and peas. Bring to a boil and add crumbled bacon and simmer for 1 – 1 ½ hours.
Cabbage – Chop cabbage into small pieces. Cook 4-5 slices of bacon and drain. Add chopped onion to bacon fat and cook till tender. Add cabbage and diced bacon, salt, pepper and cook very low, stirring to keep from scorching until tender. I always use an iron skillet.
